At this point in the summer, I can’t face either making or eating another Squash Casserole. Even Skillet Squash (with bacon & sour cream) evokes a slight grimace.
So, I turn to the grill. My plan: Grill everything. Everything!
Yellow Squash, Zuchini, Onion, Mushrooms make for a great grilled Kabob…just toss in EVOO and S&P. Even Green Tomato is terrific when grilled…try it! The taste and texture is less tomato-ish and more squash-like.
Grilled Corn on the Cob is awesome, especially when topped afterward with a compound Cilantro Butter…
Finally, if you’ve never tasted Chimmi Churri Sauce, now is the time. Basically, it’s Argentinian Pesto, and it’s delicious on anything grilled: Veggies, Steak, Shrimp…”it’s all good, dude.”
